:: Polenta ::

   When the polenta becomes a mass
     When the polenta becomes a mass that pulls neatly from the sides of the pot, remove it from the heat.

   If the polenta is lumpy

 

   Take it off the heat and use an immersible blender or manually whisk it.

   To make a firmer polenta
     Make sure the surface you are using to spread the batter is slightly wet. If you don’t do this the batter will be sticky and crumbly.
    :: Risotto ::

   Make sure you add hot stock.
     When cooking rice, never add cold stock or you will end up with hard uncooked kernels in the center of the grain.

   To help risotto broth maintain a consistent cooking temperature
   Keep the broth simmering slowly and add the rice. Never add too much broth or you can end up with overcooked risotto.
