To stiffen egg white frosting,
transfer the frosting to a double boiler and beat it over simmering
water
Spread it easily!
To thin a frosting that’s too
thick to spread easily, beat in a few drops of milk or boiling water .
To save granular frosting
To save frosting that has
become granular from sugar, add a squirt of lemon .

Higher cake
To keep a cake fresh, always
cover cut slices with plastic wrap. Cover cakes with a cake cover, or
improvise by using an inverted plastic storage container. Then,
refrigerate.
More tender cake
To make a more tender cake,
use buttermilk instead of milk. When doing this be sure to add ¼ tsp of
baking soda to the dry ingredients.
