To keep rice from breaking,
mix in a few drops of lemon juice while it’s cooking.
Selection rice
Sushi rice is mostly short
grained, however medium grained is sometimes used to. Because it’s often
covered with talk, it’s very important to rinse first.
To avoid gummy texture
Avoid stirring rice while it’s
still on the stove. This crushes the individual grains, releasing
starch, and giving it a gummy texture.

Garnish with ginger
Garnish the sushi dishes with
very thinly sliced ginger. This cleanses the mouth between different
types of sushi, and is not used as a condiment.
Add oil while cooking
When cooking rice, put a
tablespoon of oil in the water so grains remain separated.
