:: Preparation ::

   To thick, creamy soup
    For a low fat alternative to thick, creamy soup, puree the ingredients with cooked potato instead of cream.

  Adding fiber to your soup

 

   Do not throw away the green tender stalks of cauliflower base. Chop fine and use in soups like other vegetables. You will be adding fiber to your soup.

   To make soup stocks
    Cut down or eliminate stock cubes in making soup; instead use natural ingredients such as chicken and beef bones, dried anchovies (ikan bilis), mushroom stalks, nuts & beans to make soup stocks.
    :: Less Fat  ::

   To skim grease and fat off of a soup’s surface
    Try adding a few ice cubes. The ice cubes should act as a magnet and attract the grease, then they can be disposed of.

   To remove the fat from soups and stews
  Place in the refrigerator overnight. The fat will congeal on top and can be easily removed prior to serving.
